I wanted to take a moment to recognize the progress being made across Harmony. Every win reflects the effort, consistency, and teamwork of our people. Here are a few of this week’s sales and production highlights.
From Sabrina, General Manager:
This week was Zach’s first smoke flying solo. He has really taken ownership of the smoking process and has a bright future with Harmony. Using his chef experience we are really dialing in our process for a consistent and high quality product.
On top of this we have been hand skinning and hand portioning our challenging 2oz portions. While this is labor intensive it has quite a few benefits. Our recovery for the two batches was 45% and 50%. We also have less irregular cuts so the batch cooks more uniform and we are able to maintain a better water activity level. I will be doing a cost analysis of the labor involved to identify if this process is feasible for our future smokes.
From Jeremy, Sales Lead:
This week, the sales team added several new accounts and continued building strong momentum. Harmony secured placement in nine McCaffrey’s Market locations across Pennsylvania and New Jersey, as well as nine Roth’s Market locations in Oregon, including seven stores in the Salem area, giving us a stronger local presence near our main office.
We also established a new partnership with Snackman Distribution, creating access to more than 150 potential accounts across Oregon and Idaho. Additional new accounts include Oregon and More in Seaside, Oregon, and Littleton Meats in Littleton, Colorado. In total, the team sold 31 cases this week, and feedback from the new accounts has been very positive.
